Service Access
The main back-of-house kitchen is located behind this show kitchen or display/feature wall and there are 2 service access points on the left and right of this variable show kitchen/display area. These access points are dual entry/exit access points to the main restaurant area and are designed such that the kitchen is never visible to guests when the staff members move in and out for service.
The interface wall between kitchen and main dining area is a “must have”design. The stone wall is composed of the same marble but with different finishes, either smooth or matte surface, or a carved surface, and some niches can display local cultural artifacts. Designers can adjust the application of different stone surfaces based on the actual wall dimensions.
Iconic Service Table
Another iconic feature of the restaurant is the large service table located between the central row of tables and the show kitchen or display/feature wall. This is a specially chosen piece of furniture which as an option can reflect regional or local design features and/or materials. It also serves a functional purpose of service use by staff for the signature Beggar’s Chicken service, to portion food, serve beverages, etc.
Lounge Area
Lounge Area Behind the main entrance feature wall is a cozy space which serves as a small lounge area for a few guests to briefly sit or wait and have some tea. There are a few chairs and side tables strategically placed in an inviting manner with some simple design features or decorations such as mirrors, display shelves (for non-operational items e.g. teapots) or an art work.
